They are excellent, do they mix the sand with something to help keep it together or is it just done with water?

Oh sorry, I thought it was the last supper, not that I know much about things religious. Maybe smiles are difficult in sand sculpture.

Great pics.
We have sand sculture exhibitions here every year and what i read (about ours, anyway) is they are not made with beach sand, they are made with builder's sand and something is added to it. I forget what.
But it allows them to withstand normal light rain and wind for a few weeks. They can be very intricate and from what I can gather, some of the sand artists must move from place to place, contributing to exhibitions.
I know the exhibition here was not open to the beach like those in the above photos. It was closed off and people had to pay to go on and have a poper look.
